Default art restoration

I have been told by an art conservator employed by a museum to use, in certain cases, saliva to clean paintings which are simply dirty from age but do not need varnish removal. YUCK. I can do this on small works but looking for an alternative for large scale painting. Does anyone know of an over the counter product similar to saliva? I have been told that it is the digestive enzyme which is the cleaning agent in saliva. Thanks in advance. Ginger
